During Shift:
•Date Red wine bottles as you go
•Make a list of liquors you pulled from the liquor cabinet
•Stock glassware *especially the frosted pints/Stella glasses*
•Push cold glasses to the left and then stock left to right
After Shift:
• Take back any bus bins and recycling
• Take out trash (put in dish’s trash can) and replace bag
o Trash bags can be found under the microwave in the kitchen
• Break down fruit tray
• Take back bar mats, dump sink grate, beer grate
• Wipe coolers, bar top, sinks, around beer grate, around ice bin
• Clean out beer grate:
o Clean out with club soda
o Wipe inside
o Fill with ice
• Stock wine:
o 2 par of house wines
o 3 par of all other wines
• Stock Beer:
o All should have a backup 6 pack
o Top six pack has two or less bring up another six
o Rotate six packs *FIFO*
o Chimay- 4 red and 4 blue
• Stock Beer Cooler in Basement
o If there is less than 2 six packs open and new box and stock shelves
o FIFO
• Stock Ice Base/ Mango Puree:
o Always have 2 of each
o *FIFO*
• Stock straw caddies:
o Black bev naps
o Stirrers
o Straws
If there are no back up straws unwrapped you must unwrap some
• Stock fruit skewers
o Clean/change fruit skewers glass
• Fill juices: *Clean Bottles/Soak overnight if necessary
o Pineapple
o Orange Juice
o White Peach Cranberry Juice
o Olive Juice
o Milk *Date*
o Lime Juice
o Simple Syrup
o Lemonade
o Cherry Juice
• Fill Sangria bottles *let Cassie know when backup Sangria is low/Empty
• Stock silverware, App plates, paper napkins, togo bags, togo boxes, wet naps
• Double check liquor cabinet and make sure you didn’t miss any
• Pump wine bottles
• Cap bottles
• Soak soda guns in club soda
• Plug beer taps
• Empty sinks when you have gotten all martini glasses and Moscow mule glasses
o *all other glasses can go back to dish
• Wipe beer coolers
• Clean the tracks of cooler doors
• Wipe bar top
• Wipe gray mats on top of coolers
• Vacuum:
o Pull out bar chairs
o Wipe foot rest with damp cloth
o Vacuum in front of chairs
o Push in bar chairs
o Vacuum behind bar chairs
• Print check out:
o Pull out your tips
o Pull out your cash drop if it is positive
If negative the drawer will be short that amount
o Count drawer (should be around $350 unless your cash drop is negative)
o Write down ending amount under where you wrote your start amount
